Crock Pot Turkey Soup

A lot of what I do for recipes is look for something I have ingredients for, figure out how it's done, and if it's complicated I follow the directions closely as possible. For something as easy as soup, I look at the ingredients and using my cooking calculating throw stuff together. I get most of my ideas and recipes from Pinterest, as I have said, and therefore aren't original but then I tweak and add and dabble so it isn't exactly the same. Measurements of the spices are approx.

I have to report for jury selection tomorrow at the ungodly hour of 8 am so in order to have the soup going as easy as possible, I threw it all together tonight.

Crock Pot Turkey Noodle Soup

Approx. 2 cups of shredded/cut left over turkey
2 large carrots sliced (I had a bag of carrot 'chips' already so just cut the larger pieces in half)
2 ribs of celery sliced thin
1/2 yellow onion diced
1/2 green bell pepper
3 cloves garlic minced/mashed
1 tsp Italian seasoning
1/2 tsp sage
1/4 tsp thyme
1/2 tsp salt & pepper
2 or 3 bay leaves (depending on size)
7 cups (low sodium) turkey/chicken broth
1 8 oz box fettuccine noodles

Now, I don't have turkey or chicken broth handy but did have chicken bullion cubes so tossed three of those in 4 cups of water then added an extra two cups of water. I also had a wing, leg and a thigh bone left so put those in as well for more turkey flavor. The bullion is going to make it a bit salty so will see what happens.

The original recipe did not call for bell pepper, that was my addition as well as an extra clove of garlic, subbed in the bullion and added the bones. In hindsight, I should have left the turkey in the fridge and tossed that in last minute. Oh well.

Cook on low 6 hours or high 3 hours. Original recipe also had you boiling the noodles separately and then tossing them in at the end. Perfectly reasonable, but I also saw a recipe where you add them in the last half hour of cooking. I don't have 'egg noodles' so luckily I bought fettuccine noodles which is closer to the noodles in the recipe I chose to follow from 'cookierookie'.

It isn't even cooking yet and it smells wonderful! More pictures when I get home and have some tomorrow.
